HOW IS KENKEY MADE?
The scientific principle underlying KENKEY production is fermentation.
METHOD
Corn is grounded and made into dough. It is allowed to ferment for 2 days and made into balls in maize leaves. The maize leaves add flavour to the KENKEY.
